Guayaba is used to make pastries and other desserts, and is often eaten with locally produced cheese. The process of making guayaba has changed little over time. It is produced in artisan fashion, with minimal mechanization, using slow reduction in kettles over open wood-fired stone fire pits. The best-known guayaba factory is La Panchita, in Camaguay Province.
